Fruity Aperol Spritz Tiramisu
The all-summer Aperol Spritz craze is back, and as a result, the most delicious dessert of the summer has been born! I never thought people would love my Limoncello Tiramisu SO much. But hey, there's plenty more to it than that! So here's another boozy version of the Italian dessert classic.
- 150 ml Aperol
- 50 ml white wine
- 350 g sugar
- 150 ml water
- 200 ml orange juice
- 30 g cornstarch
- 80 g Butter
- 2 egg yolks
- 500 g Mascarpone
- 1 orange zest
- 200 g Stage
- 250 g ladyfingers
- 10 g mint (for decoration)
- For the syrup, bring ⅓ of the Aperol, half of the white wine, some of the sugar and water to a boil and simmer gently until the sugar has dissolved and the alcohol has evaporated, about 2 minutes. Transfer to a bowl and set aside.
- Squeeze the orange juice. For the orange cream, combine the orange juice, cornstarch, half of the remaining sugar, the remaining water, the butter, the remaining Aperol, the remaining white wine, and the egg yolks in a small saucepan. Heat over medium heat, stirring constantly, until the mixture thickens and the alcohol has evaporated, about 2 minutes. Remove from the heat, cover, and set aside.
- For the mascarpone cream, finely grate the zest of one orange. In a large bowl, combine the mascarpone, orange zest, remaining sugar, and heavy cream, then whisk with an electric mixer until stiff and fluffy.
- Dip the ladyfingers one at a time briefly into the cooled syrup and arrange them to cover the bottom of a baking dish. Spread slightly less than half of the mascarpone cream over the ladyfingers and smooth it out. Add another layer of soaked ladyfingers and press them down lightly. Spread the remaining mascarpone cream over the ladyfingers and smooth it out as well. Stir the orange cream until smooth and pour it over the mascarpone cream. Smooth the orange cream and chill the tiramisu for at least 2–3 hours. Garnish with orange slices and mint.
