Mediterranean Dirty Cabbage with Beef

This Mediterranean Dirty Cabbage with Beef is my fresh, flavorful twist on the viral dirty cabbage recipe. It’s made in one pan with tender cabbage, ground beef, tomatoes, peppers, herbs, lemon, and simple Mediterranean spices that I almost always have in my pantry.

Ingredients · Servings 6
  • 1 large green cabbage, roughly chopped
  • 1 and 1/2 pounds ground beef
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 5 garlic cloves, grated or minced
  • 3 tablespoons extra-virgin olive oil, plus more as needed
  • 1 (14-ounce) can crushed or diced tomatoes
  • 1 tablespoon Worcestershire sauce, optional
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon crushed red pepper flakes, or to taste
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 3 scallions, thinly sliced
  • Juice of 1 lemon
  • Lemon wedges, for serving
  • Crumbled feta cheese, for serving, optional
Method · 50 min
  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the onion and red bell pepper. Season with a pinch of salt and cook for 5–6 minutes, or until softened.
  2. Add the garlic and cook for about 30 seconds, just until fragrant.
  3. Add the ground beef directly to the skillet. Season with salt and black pepper. Break the beef apart with a wooden spoon and cook over medium-high heat until it is no longer pink, about 6–8 minutes. Drain some of the excess fat if necessary.
  4. Add the oregano, cumin, sweet paprika, smoked paprika, coriander, and crushed red pepper flakes. Mix well and cook for 30 seconds to warm the spices.
  5. Add the tomatoes and Worcestershire sauce, if using. Stir everything together and cook for 2–3 minutes.
  6. Add the cabbage in batches, tossing each addition with the beef mixture as it begins to wilt. Season lightly with salt and black pepper as needed.
  7. Cover the skillet and cook over medium-low heat for approximately 15 minutes, stirring occasionally, until the cabbage is tender but still has some texture.
  8. Uncover and cook for another 5–10 minutes, stirring occasionally, until the excess liquid reduces and the beef, tomatoes, and spices cling to the cabbage.
  9. Remove the pan from the heat. Add the parsley, dill, scallions, and lemon juice. Toss everything together and taste. Adjust the salt, pepper, and lemon as needed.
  10. Finish with a drizzle of extra-virgin olive oil. Serve warm with lemon wedges and crumbled feta, if desired. Kali Orexi!

My Mediterranean Version of Viral Dirty Cabbage

Dirty cabbage has been everywhere lately, and as soon as I saw it, I knew that I had to make a Mediterranean version!

The traditional viral recipes are usually made with ground beef, sausage, bacon, or a combination of meats. They look delicious, but I wanted something a little lighter using the ingredients and flavors that I already keep in my kitchen.

So, out came the olive oil, garlic, oregano, dill, parsley, lemon, and lots of warm spices.

Everything cooks together in one big skillet until the cabbage is tender, the beef is flavorful, and the tomato sauce coats every bite. A handful of fresh herbs, scallions, and plenty of lemon added at the end brighten the entire dish.

This is the kind of meal that I love most: uncomplicated, comforting, full of flavor, and made with everyday ingredients.

It tastes like a cozy Mediterranean cousin of unstuffed cabbage rolls—without the rice, rolling, or extra work.

Simple Ingredients with Plenty of Flavor

The beauty of this recipe is that it takes humble ingredients and transforms them into a hearty, colorful dinner.

The onion and red bell pepper cook slowly in olive oil until they begin to soften and sweeten. Garlic, oregano, cumin, paprika, smoked paprika, coriander, and crushed red pepper build layer after layer of flavor.

Then, the beef cooks right in that aromatic mixture. There’s no need to brown it separately or dirty another dish.

Tomatoes make everything rich and saucy, while the cabbage releases its own moisture as it cooks. That means you do not need to add broth. The final squeeze of lemon, fresh parsley, dill, and scallions wakes everything up and gives the dish that unmistakable Mediterranean freshness.

Let’s Make Mediterranean Dirty Cabbage

Begin by heating the olive oil in a large, deep skillet or Dutch oven. Add the onion and red bell pepper, season lightly with salt, and cook until they begin to soften.

Add the garlic and cook briefly, just until fragrant. Garlic burns easily, so it only needs a few seconds.

Next, add the ground beef directly to the vegetables. Season it with salt and black pepper, break it apart, and cook until it is no longer pink.

Add the oregano, cumin, sweet paprika, smoked paprika, coriander, and crushed red pepper flakes. Stir everything together and allow the spices to warm through. This brings out so much more flavor than simply stirring them in at the end.

Add the tomatoes, Worcestershire sauce if you’re using it, and the chopped cabbage. You may need to add the cabbage in two or three batches. It will look like too much at first, but it wilts down very quickly.

Cover the pan and cook until the cabbage is tender but still has some texture. Then, remove the lid and continue cooking until the extra liquid evaporates and everything becomes rich and saucy.

Finish with parsley, dill, scallions, fresh lemon juice, and a final drizzle of good olive oil.

Don’t add broth

Cabbage releases plenty of water as it cooks. Between the cabbage and canned tomatoes, there is enough liquid to create a beautiful sauce without turning the dish into soup.

Add the cabbage in batches

A whole cabbage takes up a lot of room before it wilts. Add a portion, toss it with the beef, and then add more as space becomes available.

Don’t overcook the cabbage

The cabbage should be tender but still have a little texture. Cooking it too long can make it mushy and release more water into the pan.

Let the excess liquid reduce

Once the cabbage is tender, uncover the pan and let everything cook for another 5–10 minutes. This concentrates the flavor and allows the tomato, beef, and spices to cling to the cabbage.

Always finish with something fresh

The lemon juice, parsley, dill, and scallions are not just garnishes. They balance the rich beef and tomato mixture and bring the Mediterranean flavors together.

Variations and Substitutions

You can easily make this recipe your own.

Use ground lamb, turkey, or chicken in place of the beef. Ground lamb will give it an especially delicious Greek flavor.

For a vegetarian version, leave out the beef and add cooked chickpeas or lentils. Mushrooms would also add a nice meaty texture.

If you like more heat, increase the crushed red pepper flakes or add a chopped chili pepper.

What to Serve with Mediterranean Dirty Cabbage

This is a complete meal all by itself, especially if you’re looking for something filling and lower in carbohydrates.

For a larger dinner, serve it with warm pita or crusty bread, creamy tzatziki, feta cheese, Kalamata olives, and lemon wedges.

Rice, roasted potatoes, or orzo would also be delicious for soaking up the sauce. Honestly, all this dish really needs is some crumbled feta on top and a piece of bread on the side. Kali Orexi!

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to four days.

Reheat the cabbage in a skillet over medium-low heat or in the microwave. If it looks dry, add a tiny splash of water. Finish the reheated dish with another squeeze of lemon to freshen all the flavors.

This recipe is wonderful for meal prep because the flavors become even more delicious after they have had time to mingle.
