Lentil soup with cauliflower
Lentil soup with cauliflower and fried chickpeas that provide a delicious crunch! Jet explains how to make this delicious soup.
- 2 tablespoons extra virgin olive oil
- 1.5 tbsp curry madras spices
- 1 ui
- 2 cloves of garlic
- 800 g cauliflower florets
- 1 can of lentils (400 g)
- 1 can of peeled tomatoes (400 g)
- 2 vegetable stock cubes
- 1 can chickpeas (400 g)
- 1 bunch of flat-leaf parsley
- 1 tbsp apple cider vinegar
- 50 ml extra virgin olive oil
- Slice the onion into half rings and finely chop the garlic. Heat 1 tablespoon of olive oil in a soup pot. Sauté the onion, garlic, and the remaining curry madras spices for 3 minutes over low heat.
- If desired, cut the cauliflower into slightly smaller florets, add them, and fry for 1 minute.
- Rinse the lentils. Add the lentils, peeled tomato stock cubes, and 1 liter of water. Bring to a boil and cook the soup for 12-15 minutes until done.
- Puree the soup until smooth with an immersion blender and divide among 4 bowls. Drizzle with parsley oil and garnish with the crispy chickpeas.
- Preheat the oven to 200 °C.
- Drain the chickpeas and spread them on a baking sheet lined with parchment paper. Sprinkle with salt and pepper. Sprinkle with 1/2 tbsp curry madras spices.
- Drizzle with 1 tbsp olive oil and roast in the oven for 20 minutes. Stir halfway through the baking time.
- Chop the parsley coarsely and place in a tall beaker. Add the olive oil and apple cider vinegar. Blend finely with an immersion blender.
I really enjoy making soup. It's easy, it's warming, and it's real comfort food. When I make soup, I *always* start with garlic and onion!
