Cooking Directions

STEP 1.In a mixing bowl, mash 2 ripe bananas until smooth.

STEP 2.Add 1 cup of corn kernels, 1/2 cup of all-purpose flour, 1/4 cup of milk, 1 beaten egg, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the mashed bananas. Mix well to combine.

STEP 3.Heat oil in a frying pan over medium heat. Drop spoonfuls of the banana corn batter into the hot oil and flatten slightly with the back of the spoon.

STEP 4.Cook the fritters for 2-3 minutes on each side, or until golden brown and crispy.

STEP 5.Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.

STEP 6.Serve the banana corn fritters warm with a drizzle of honey or a sprinkle of powdered sugar.

STEP 7.Enjoy these delicious fritters as a snack or as a side dish.

Cooking Tips

Make sure the bananas are ripe for a sweeter flavor and smoother texture.

You can add some chopped green onions or herbs like cilantro or parsley for extra flavor.

If the batter is too thick, add a little more milk to achieve the desired consistency.

To keep the fritters warm while cooking in batches, place them on a baking sheet in a preheated oven at 200°F (93°C).

Storage and Serving

Leftover fritters can be stored in an airtight container in the refrigerator for up to 2 days.

Reheat the fritters in a toaster oven or oven at 350°F (175°C) for a few minutes until warmed through.

Serve the reheated fritters with a dollop of sour cream or yogurt for a creamy and tangy contrast.
