Traybake with duchesses and pumpkin
Traybake for the holidays? Absolutely! This traybake with duchesses is foolproof and quick to make. Everything fits on one baking sheet, which means less washing up and therefore more time to enjoy with friends and family.
Ingredients · Servings 4 people
- 1 Aviko Pom' Duchesse (750 g)
- 500 g bospeen
- 400 g pumpkin (piece)
- 3 tablespoons of honey
- 3 tablespoons olive oil
- 1 orange (juice and zest)
- 2 sprigs of thyme
- baking sheet lined with baking paper
Method · 40 min
- Preheat the oven to 220 ºC. Remove the tops from the carrots and peel them with a vegetable peeler. If necessary, cut large carrots into 5-6 cm pieces.
- Scrub the pumpkin clean (peeling is not necessary) and cut into 2 cm cubes.
- Mix the honey with the olive oil, the orange juice, the zest, and the thyme sprigs. Season to taste with salt and pepper. Toss the carrots and pumpkin in the marinade.
- Spread the vegetables over the baking sheet. Place the potato towers in between; make sure they do not touch the marinade, otherwise they will not bake nice and crispy.
- Bake the potato towers with the vegetables in the preheated oven for about 20 minutes until golden brown and cooked through.
- Serve the potato towers and vegetables on a nice platter, if desired.
