Matcha chocolate mousse

Matcha is currently an indispensable ingredient in viral recipes. This is your moment to use the incredibly popular tea in this creamy chocolate mousse.

Ingredients · Servings 4 people
  • 500 ml cold whipping cream
  • 1 tbsp high-quality matcha + extra for sprinkling
  • 150 g white chocolate
  • 50 g powdered sugar
  • 1 pinch of salt
Method · 20 min
  1. In a large bowl, mix 50 ml of whipping cream with 1 tablespoon of matcha powder.
  2. Add the white chocolate and a pinch of salt, and melt everything in a bain-marie over a pan of boiling water. Stir well, remove the bowl from the heat, and let it cool.
  3. Whip the remaining 450 ml of cold whipping cream with the powdered sugar until stiff peaks form. Put half of the whipping cream into a piping bag and keep this in the refrigerator for the topping.
  4. Mix half of the whipped cream with the cooled chocolate mixture and mix well with a whisk. Then add the remaining cream and gently fold it in until a homogeneous mousse is formed.
  5. Divide the mousse among 4 glasses and let it set in the refrigerator for 1 hour.
  6. Pipe or spoon the whipped cream onto the chocolate mousse before serving. Sprinkle with matcha powder.
