How to prepare sautéed green beans with chicken

Ingredients · Servings 4
  • ½ boneless chicken breast, cut into cubes
  • 300 grams of green beans cut into sticks
  • 1 red bell pepper, cut into strips
  • 1 tomato, cut into strips, without peel or seeds
  • 1 onion, sliced ​​into strips
  • 3 cloves of garlic, grated or chopped
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of sesame oil
  • 1 tablespoon of ground ají panca (red chili pepper)
  • 1/4 cup chicken broth

  • 3 Canchan potatoes, cut into sticks and fried
  • 2 tablespoons of chopped parsley or cilantro

  1. Cook the green beans in boiling salted water for 2 minutes. Remove and stop the cooking process by plunging them into ice water. The green beans will be partially cooked.
  2. Season the chicken breast with salt, pepper, cumin, and half of the minced garlic. Let it rest for a few minutes.
  3. Heat the sesame oil in a pan and brown the chicken. Once it's nicely browned, add a splash of stock to finish cooking the chicken.
  4. Add the remaining garlic, the aji panca, the cumin, and the pepper.
  5. Add the bell pepper and let it cook for a few seconds.
  6. Continue with the precooked green beans, onion, soy sauce and oyster sauce.
  7. Finally, add the tomato and vinegar.
  8. Combine with the fried potatoes and sprinkle with chopped parsley or cilantro.

Stir-fried green beans with chicken are a traditional Peruvian dish that stands out for being a quick stir-fry, full of flavor and freshness.

By applying the "wok stir-fry" with ingredients such as ají panca, onion, garlic and soy sauce, a balanced mixture of aroma, texture and color is achieved.
