Gravlax Salmon Heart Recipe

Today in the kitchen? Alysone Sombry, confirmed series addict, informed Asiaphile, who brilliantly juggles graphic design and video.

Your recipe?

A heart of gravlax salmon that's both comforting and intensely flavorful! It's a much simpler recipe than it seems if you have just a little patience for the marinating time. It's always a guaranteed crowd-pleaser in the evening!

Your ideal cooking partner?

Chefs Hirose Abe and Pierre Gagnaire to learn how to play with Japanese and French cuisines! If I knew how to cut fish perfectly, I would eat nothing else.

Your dream guests?

Very original, I know: my close friends and family! A meal is a time for relaxation and comfort. Being surrounded by loved ones is the essential ingredient for truly enjoying a meal.

Schedule

Pour the salt, sugar and thyme (or herbs and spices of your choice) into a mixing bowl, then mix.

In a suitable dish, spread a first layer of the mixture, place the piece of salmon on top, then completely cover the fish with the rest of the mixture. It must be well wrapped.

Cover the dish with cling film and let the salmon rest in the refrigerator for 8 to 48 hours. The longer the marinating time, the more concentrated the flavor*.

Rinse thoroughly with tap water.

Serve in thin slices simply or pimped with fresh cheese, spring onion and cucumber.

It's ready!

* A tip: don't wait too long to enjoy the freshness and melt-in-your-mouth texture of the salmon.
