- 6 ounces stuffing mix (or 3 to 4 cups homemade stuffing)
- 1¼ cups hot water (or as needed)
- 3 cups frozen mixed vegetables (thawed)
- 2 cups cooked chopped chicken (diced)
- 1 (10.5 ounce) can condensed cream of chicken soup (or homemade condensed soup)
- ⅓ cup sour cream
- salt and black pepper (to taste)
- Preheat the oven to 400°F.
- Prepare stuffing as directed on box. Set aside to rest for 5 minutes.
- In a greased 2.5-Quart pan, combine mixed vegetables, cooked chicken, cream of chicken soup, and sour cream. Mix well. Season with salt and pepper to taste.
- Top with the stuffing mixture and bake for 25-30 minutes, until bubbly and golden brown.
