  • 1 tbsp lao gan ma or my chili oil
  • 1 tbsp mirin
  • 1 tbsp rice vinegar, white vinegar, or black vinegar
  • 1 tbsp sesame seeds
  • A pinch of black pepper
  • 1 clove of garlic, grated or finely chopped
  • 1 English cucumber, sliced into 1/2” thick
  • Chili threads or fried shallot/garlic for garnish (optional)

  1. Combine soy sauce, yondu, shiro dashi, lao gan ma, mirin, rice vinegar, sesame seeds, black pepper, and garlic in a mixing bowl. Mix well and set aside.
