- We peel and cut the cassava.
- We put the pieces in a pot and cover them with cold water. We add salt and boil until the cassava is soft.
- We drain well, remove the fibers and begin to crush.
- In a bowl, mix the cassava with the eggs, sugar, and yeast until you obtain a homogeneous but not smooth dough.
- Cover and let it rest for six hours or until the dough has increased in volume.
- We heat vegetable oil in a deep frying pan or a pot.
- We wet our fingers in salted water, take a portion of the dough, shape it into a circle, and make a hole in the middle. We place it on the oil and turn it over with the help of a stick.
- Remove them when the fritters are golden brown.
- We serve it with cane honey.
