Oriental turkey gravy (reduction):
- Place the broth and soy sauce in a frying pan.
- Add the sugar. Dissolve and stir well.
- Simmer, stirring, until the sauce reduces. Set aside.
Chaufa rice:
- Cut the turkey meat into pieces approximately 1.5 centimeters in size.
- Make an omelet with the eggs. Cut the omelet and set aside.
- In a wok or large frying pan, add a splash of vegetable oil and a teaspoon of sesame oil.
- Add the chopped ginger and the white part of the scallions. Let it sweat.
- Discard the cold rice. Fry the rice in the mixture.
- Season with salt, pepper and a pinch of Chinese cinnamon.
- Add the Hoisin sauce.
- Pour a splash of ginger water (grate the ginger and press it with your fingers on the palm of your hand to extract the juice).
- Add the broth and soy sauce.
- Add ½ tablespoon of sugar.
- Pour in a splash of strained turkey baking juice.
- Place the chopped half pepper.
- Add the already chopped egg and turkey.
- Add the green part of the scallions. Stir.
- Serve with a drizzle of sauce.
