• In a saucepan, combine the milk, cinnamon, cloves, star anise, and orange peel. Heat until it comes to a gentle boil.
• Add the cocoa powder and cocoa paste. Mix until completely melted. Stir in sugar to taste.
• If necessary, dissolve a tablespoon of cornstarch in a splash of cold milk and add it to the pot to thicken the chocolate. Mix over medium heat until it thickens slightly.
• Strain to remove the spices, serve hot and decorate with marshmallows and cocoa powder.

TIPS

• You can give chocolate a special touch by adding a pinch of cardamom, an aromatic spice that enhances the notes of cocoa.
