- Blend the corn kernels with the scallions, red onion, and cilantro to taste. If necessary, add a splash of water. Add the garlic, half the lard, salt, pepper, and cumin. Continue blending. It should form a thick paste.
- In a frying pan, melt the remaining lard and fry the yellow chili pepper.
- Add the blended mixture and cook over medium heat for 20 to 30 minutes, stirring constantly, until the mixture thickens and turns a deeper green color. Adjust the salt to taste.
- Blanch the corn husks.
- Place portions of the dough on the blanched corn husks, wrap and tie with string.
- In a pot, heat water and enough corn husks for steaming. Place the tamales on top and cook over low heat for 30 to 40 minutes, or until firm.
- Serve with Creole sauce.
TIPS
- Add enough cilantro to provide more flavor and color.
