Pasta with spinach and sun-dried tomatoes

This pasta with spinach and sun-dried tomatoes is one of those dishes you can put on the table in no time, but is incredibly delicious. It's great with smoked chicken on the side. Ideal for a busy weekday!

Ingredients · Servings 2
  • 200 gr pasta (bijv penne)
  • 200 gr verse spinazie
  • 50 gr zongedroogde tomaatjes
  • 150 ml kookroom
  • 1 ui
  • 2 tenen knoflook
  • 200 gr gerookte kip
  • 2 tl Italiaanse kruiden (gedroogd)
  • geraspte Parmezaanse kaas
  • zout en peper
Method · 10 min
  1. Kook de pasta volgens de instructies op de verpakking.
  2. Snijd de kip in stukjes.
  3. Snipper de ui en snijd de knoflook fijn.
  4. Snijd ook de zongedroogde tomaatjes in stukjes.
  5. Giet een scheutje olie in een pan en bak de ui en knoflook.
  6. Voeg daarna de kookroom, spinazie, zongedroogde tomaatjes, kip en Italiaanse kruiden toe.
  7. Als de spinazie is geslonken voeg je de geraspte Parmezaanse kaas en de pasta toe en meng je alles door elkaar.
  8. Breng eventueel op smaak met zout en peper.

Pasta with spinach and sun-dried tomatoes

  • 200 g pasta, e.g. penne
  • 200 g fresh spinach
  • 50 g sun-dried tomatoes
  • 150 ml cooking cream
  • 1 ui
  • 2 cloves of garlic
  • 200 g smoked chicken
  • 2 tsp dried Italian herbs
  • grated Parmesan cheese
  • salt and pepper

Preparation method:

  • Cook the pasta according to the instructions on the packaging.
  • Cut the chicken into pieces.
  • Chop the onion and finely chop the garlic.
  • Cut the sun-dried tomatoes into pieces as well.
  • Pour a splash of oil into a pan and fry the onion and garlic.
  • Then add the cooking cream, spinach, sun-dried tomatoes, chicken, and Italian herbs.
  • Once the spinach has wilted, add the grated Parmesan cheese and the pasta, and mix everything together.
  • Season with salt and pepper, if desired.
