Banana bread with speculoos

Banana bread is always a good idea, but this version with speculoos is extra delicious. The banana bread is moist and spicy. Perfect for using up ripe bananas and ideal as a snack or with coffee. This banana bread with Speculoos is easy to make and keeps well for a few days, if not sooner.

Ingredients · Servings 8
  • 3-4 rijpe bananen
  • 250 gr bloem
  • 1 tl baking soda ((of 1 zakje))
  • 175 gr suiker
  • 100 gr zachte boter
  • 2 eieren
  • 100 gr speculooskoekjes (verkruimeld)
  • 1 el speculoos
  • 1 tl vanille extract
  • 1 tl kaneel
  • Snufje zout
Method · 1 h 10 min
  1. Verwarm de oven voor op 160 graden.
  2. Vet een cakevorm in of bekleed met bakpapier.
  3. Doe de zachte boter en suiker in een kom. Mix door elkaar.
  4. Voeg de eieren en vanille toe en mix nogmaals door elkaar.
  5. Voeg de bloem, baking soda, snufje zout en een kaneel toe. Meng nogmaals door elkaar.
  6. Prak de bananen op een bord/in een kom tot puree.
  7. Voeg het bananenmengsel en de speculoos toe en meng door het beslag.
  8. Roer de verkruimelde speculoos voorzichtig door het beslag. Bewaar een paar kruimels om later over de cake te strooien.
  9. Giet het beslag in de cakevorm en strooi de rest van de speculooskruimels erover.
  10. Zet de cake in de voorverwarmde oven en bak circa 50–60 minuten, tot de cake goudbruin is en een satéprikker er schoon uitkomt.
  11. Haal de cake uit de oven en laat hem circa 10 minuten afkoelen in de vorm. Haal de cake daarna uit de vorm en laat volledig afkoelen op een rooster.

Banana bread with speculoos

  • 3-4 ripe bananas
  • 250 g flour
  • 1 tsp baking soda (or 1 sachet)
  • 175 g sugar
  • 100 g soft butter
  • 2 eggs
  • 100g crumbled speculoos cookies
  • 1 the speculoos
  • 1 teaspoon vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt

Preparation method:

  • Preheat the oven to 160 degrees.
  • Grease a cake tin or line it with baking paper.
  • Put the softened butter and sugar in a bowl. Mix together.
  • Add the eggs and vanilla and mix again.
  • Add the flour, baking soda, a pinch of salt, and a cinnamon stick. Mix together again.
  • Mash the bananas on a plate or in a bowl until pureed.
  • Add the banana mixture and the speculoos and mix into the batter.
  • Gently stir the crumbled speculoos into the batter. Save a few crumbs to sprinkle over the cake later.
  • Pour the batter into the cake tin and sprinkle the remaining speculoos crumbs over it.
  • Place the cake in the preheated oven and bake for approximately 50–60 minutes, until the cake is golden brown and a skewer comes out clean.
  • Remove the cake from the oven and let it cool in the tin for about 10 minutes. Then remove the cake from the tin and let it cool completely on a wire rack.
