Pesto pasta with burrata and chorizo
In the mood for an easy yet delicious pasta? This pesto pasta with burrata and chorizo is highly recommended! Perfect for a busy weekday, but also tasty if you want something extra without much effort. Optionally serve with a simple salad for a complete meal.
Ingredients · Servings 2
- 200 gr pasta
- 1 bol burrata (of 2 kleine)
- 100 gr chorizo
- 100 gr (verse)pesto (bijv. ons pesto recept)
- 10-12 cherrytomaatjes
- 2 tenen knoflook
- 2 handjes rucola
- snufje peper en zout
- evt. pijnboompitten
Method · 20 min
- Kook de pasta volgens de instructies op de verpakking.
- Maak eventueel zelf pesto, met ons pesto recept.
- Als je het lekker vindt, kun je ook nog de pijnboompitten even roosteren in een pan, zonder olie, totdat ze goudbruin zijn. Leg ze daarna even apart.
- Snijd de chorizo in stukjes.
- Doe de chorizo in een pan zonder olie. Bak de chorizo krokant. Schep de chorizo uit de pan en zet even apart.
- Halveer de cherrytomaatjes en snijd de knoflook fijn. Giet een scheutje olie in de pan en bak de knoflook en tomaatjes 2-3 minuten.
- Voeg de gekookte pasta toe aan de pan, samen met de pesto en meng alles goed door elkaar.
- Voeg de rucola toe en meng kort door de pasta. Breng op smaak met een snufje peper en zout.
- Verdeel de pasta over de borden. Leg de burrata bovenop de pasta. Snijd de burrata open zodat deze lekker over de pasta heen loopt.
- Strooi de chorizo er ook nog overheen en serveer direct.
Preparation method:

- Cut the chorizo into pieces.
- Put the chorizo in a pan without oil. Fry the chorizo until crispy. Remove the chorizo from the pan and set aside.
- Halve the cherry tomatoes and finely chop the garlic. Pour a splash of oil into the pan and fry the garlic and tomatoes for 2-3 minutes.
- Add the cooked pasta to the pan, along with the pesto, and mix everything well together.
- Add the arugula and mix briefly through the pasta. Season with a pinch of salt and pepper.
- Divide the pasta among the plates. Place the burrata on top of the pasta. Cut the burrata open so that it drapes nicely over the pasta.
- Sprinkle the chorizo over it as well and serve immediately.
