Oven-baked ratatouille
This oven-baked ratatouille is an easy dish packed with vegetables. Aubergine, courgette, and tomato go into the baking dish along with a simple tomato sauce. Then the oven basically does the rest of the work.
- 1 aubergine
- 1 courgette
- 3 tomaten
- 1 ui
- 2 tenen knoflook
- 400 gr tomaten blokjes (uit blik)
- 2 tl Provençaalse kruiden
- snufje peper en zout
- Verwarm de oven voor op 190 graden.
- Snijd de aubergine, courgette en tomaten in dunne plakjes.
- Snipper de ui.
- Fruit de ui en uitgeperste knoflook aan in een pan en voeg de tomatenblokjes, Provençaalse kruiden en een snufje peper en zout toe. Laat dit 5 minuten zachtjes pruttelen.
- Schep wat van de saus in een ovenschaal en verdeel de groenten dakpansgewijs over de saus.
- Breng op smaak met zout en peper.
- Schep de rest van de saus er overheen.
- Bak de ratatouille ongeveer 40 minuten in de oven op 190 graden.

Making easy ratatouille
Ratatouille is a French dish with various vegetables and herbs. In this version, we make the ratatouille nice and easy in the oven. First, we make a quick tomato sauce with onion, garlic, and Provençal herbs. On top of that, we arrange slices of eggplant, zucchini, and tomato in an overlapping pattern. Just pop it in the oven for a short while, and you have a delicious bowl full of vegetables. Serve the ratatouille with baguette, rice, or potatoes, for example.
Oven-baked ratatouille
- 1 aubergine
- 1 courgette
- 3 tomatoes
- 1 ui
- 2 cloves of garlic
- 400 g diced tomatoes (canned)
- 2 tsp Provençal herbs
- pinch of salt and pepper
Preparation method:
- Preheat the oven to 190 degrees.
- Slice the eggplant, zucchini, and tomatoes into thin slices.
- Chop the onion.
- Sauté the onion and crushed garlic in a pan and add the diced tomatoes, herbs from Provence, and a pinch of salt and pepper. Let this simmer gently for 5 minutes.
- Spoon some of the sauce into an oven dish and arrange the vegetables overlapping over the sauce.
- Season with salt and pepper.
- Spoon the rest of the sauce over it.
- Bake the ratatouille in the oven at 190 degrees for about 40 minutes.
What do you eat with ratatouille?
You can serve this ratatouille in various ways. With some crusty baguette on the side, you have a delicious vegetarian meal. Want to make it a bit more elaborate? Then serve the ratatouille with rice, couscous, or fried potatoes. Ratatouille is also very tasty as a side dish with chicken or fish, for example.
Tip: Do you have any leftover vegetables? Bell peppers, for example, also go very well with this.
