A melting center, a rich chocolate flavor, and a still-warm bite: there's no doubt about it, the chocolate lava cake is a true indulgence for many gourmets. Today, we're sharing Pierre Hermé's recipe for making it at home.

While Pierre Hermé is renowned for his incredible macarons, the pastry chef has other talents. Recently, we shared his easy and particularly delicious lemon cake recipe.

Today, we're focusing on another classic pastry: the chocolate lava cake, a comforting dessert that's sure to please the whole family. This baking expert shared his recipe on Instagram. So, to recreate it at home, here's how.

Ingredients for 6 people

  • 250g of unsalted butter at room temperature
  • 180 g de sucre
  • 200g of eggs
  • 70g of flour
  • 250g of dark chocolate

The steps for the chocolate lava cake recipe

Preparation time: 15 minutes. Cooking time: 30 minutes.

In a mixing bowl, whisk together the softened butter, sugar, whole eggs, flour, and melted dark chocolate. Pour the mixture into a greased and floured loaf pan. Scrape down the sides of the pan with a spatula to ensure no batter is wasted. Bake at 180°C (350°F) for 30 to 35 minutes. Check for doneness with a knife. Once baked, let the molten chocolate cake cool completely before serving.

How to personalize a chocolate lava cake?

With a cake this soft and moist, it's hard not to want to reinvent it endlessly… To keep things interesting, you can replace some of the flour with an ingredient that adds flavor and moisture. For example, try almond flour, or experiment with hazelnut flour, cornstarch, or even shredded coconut for a more melt-in-your-mouth and fragrant result.

For an extra touch of indulgence, add a molten center (salted caramel, chocolate spread, praline, raspberry coulis, etc.) or top the cake with crunchy toppings, such as macadamia nuts, pistachio pieces, or roasted hazelnuts. Feel free to adapt the recipe to your liking.
