Lemon Cheesecake from the jar

Also included: 4 ovenproof ramekins, each 250 ml.

Ingredients · Servings 4
  • 100 g Butter
  • 150 g Shortbread
  • 2 Bio-Limette
  • 4 Ei
  • 100 g Zucker
  • 200 g Doppelrahmfrischkäse
  • 3 El Speisestärke
  • 2 Stiele Zitronenmelisse
  • 1 Apfel
  • 1 Bio-Zitrone
  • 1 Tl Puderzucker
Method · 1 h 5 min
  1. Butter in einem Topf zerlassen. Shortbread in einen Gefrierbeutel geben und mithilfe eines Rollholzes zerkleinern. Keksbrösel und Butter mischen und gleichmäßig in vier ofenfeste Förmchen (250 ml Inhalt) verteilen und leicht andrücken.
  2. Limettenschale von 1 Limette fein abreiben, beide Limetten auspressen. Eier und Zucker in einer Schüssel mit den Quirlen des Handrührers schaumig schlagen. Quark, Frischkäse, Limettenschale und Limettensaft zugeben und cremig rühren. Stärke über die Quarkcreme sieben und mit einem Teigschaber unterrühren.
  3. Backofen auf 160 Grad (Umluft 140 Grad) vorheizen. Quarkcreme gleichmäßig auf die Gläser mit dem Keksboden verteilen. Gläser in eine ofenfeste Auflaufform stellen und die Form zu etwa drei Viertel mit heißem Wasser auffüllen. Form mit den Gläsern in den heißen Backofen schieben, auf der 2. Schiene von unten 35 Minuten backen. Cheesecakes aus dem Wasser nehmen und auf einem Kuchengitter auskühlen lassen.
  4. Melisseblättchen abzupfen. Apfel vierteln, entkernen und in feine Spalten schneiden. 1 Tl Zitronenschale fein abreiben. 2 El Saft auspressen. Apfelspalten mit Zitronenschale, Zitronensaft und Puderzucker mischen und auf den Cheesecakes verteilen. Mit Melisseblättchen bestreut servieren.
  • Melt the butter in a saucepan. Place the shortbread in a freezer bag and crush it using a rolling pin. Mix the shortbread crumbs and butter, then divide the mixture evenly among four ovenproof ramekins (250 ml capacity) and press down lightly.
  • Finely grate the zest of one lime, then juice both limes. In a bowl, whisk the eggs and sugar with an electric mixer until light and fluffy. Add the quark, cream cheese, lime zest, and lime juice, and mix until creamy. Sift the cornstarch over the quark mixture and fold it in with a spatula.
  • Preheat the oven to 160°C (140°C fan-assisted). Evenly distribute the quark cream among the glasses with the biscuit bases. Place the glasses in an ovenproof baking dish and fill the dish about three-quarters full with hot water. Place the dish with the glasses in the preheated oven and bake on the second rack from the bottom for 35 minutes. Remove the cheesecakes from the water and let them cool on a wire rack.
  • Pluck the lemon balm leaves. Quarter the apple, remove the core, and cut into thin wedges. Finely grate 1 teaspoon of lemon zest. Squeeze out 2 tablespoons of juice. Mix the apple wedges with the lemon zest, lemon juice, and powdered sugar, and arrange on the cheesecakes. Sprinkle with lemon balm leaves and serve.

Baked lemon pudding is also wonderful for eating with a spoon as a dessert or in the afternoon with coffee. It's also a hit with children because of its wonderfully lemony flavor and fluffy texture. The pudding, made with lemon juice and zest, is poured into small ramekins and then baked in a water bath in the oven until golden brown.
