How I can mackerel for the winter for soups, potatoes and rice

  • Скумбрія свіжоморожена 4 шт.
  • Сіль 1 ч. л.
  • Перець чорний, горошок 4 шт.

  1. Розморожену скумбрію чищу від нутрощів. Відрізаю голови, хвости, великі плавники. Нарізаю на шматочки 2-3 см завтовшки.У чисті півлітрові банки розкладаю перець горошком, духмяний перець, коріандр, сіль по 0,5 ч. л.По банках розкладаю скумбрію не сильно свободно й не сильно щільно.Потім у дві банки з рибою кладу по 2 ст. л. томатної пасти.Увага: для скумбрії в томаті, томатну пасту потрібно викласти на перший шар риби, потім зверху покласти ще рибу.Вливаю у кожну банку по 2 ст. л. холодної кип’яченої води й соняшникової олії. Зверху насипаю по 0,5 ч. л. солі в кожну банку.Порада від SHUBA: зверху в кожну банку можна додати трохи насіння коріандру.
  2. Кип’ячу трохи води й опускаю туди кришки на 10 секунд. Потім закручую банки кришками.
  3. Велику каструлю застеляю рушником. Виставляю на нього банку.Заливаю водою до на 2 см вище за кришки банок.Ставлю консерви на маленький вогонь і доводжу до кипіння. Потім стерилізую скумбрію 6 годин.Увага: під час стерилізації потрібно додавати кип’ячену теплу воду, щоб вона покривала кришки на 2 см.За 6 годин стерилізацію вимикаю вогонь і залишаю банки в каструлі, доки вода не стане холодною.

These canned fish taste like mackerel marinated in ketchup. Svitlana Golovko told how she seals mackerel in half-liter jars for the winter. We will have two ways - with tomato paste and without it.

Tips for canned mackerel from the recipe author

  • I recommend cutting fish that is not completely defrosted. This way it is easier to clean.
  • I don't pack the fish into the jars too tightly.
  • You can't use ketchup, only tomato paste.
  • During the 6-hour sterilization of canned goods, the water should always cover the lids of the jars. You need to add cold boiled water.
  • Ready canned mackerel should be completely cooled in water.

I clean the insides of the defrosted mackerel. I cut off the heads, tails, and large fins.

In clean half-liter jars, I put peppercorns, allspice, coriander, and salt, 0.5 tsp each.

I spread the mackerel in the jars, not too loosely and not too tightly.

Then I put 2 tablespoons of tomato paste in each of the two jars with the fish.

Note: for mackerel in tomato, tomato paste should be spread on the first layer of fish, then put more fish on top.

I pour 2 tbsp. of cold boiled water and sunflower oil into each jar. I pour 0.5 tsp. of salt into each jar on top.

I boil some water and dip the lids in for 10 seconds. Then I screw the lids on the jars.

I cover a large saucepan with a towel. I place the jar on it.

I fill with water to 2 cm above the jar lids.

I put the canned food on a low heat and bring it to a boil. Then I sterilize the mackerel for 6 hours.

Attention: during sterilization, you need to add boiled warm water so that it covers the lids by 2 cm.

After 6 hours of sterilization, I turn off the heat and leave the jars in the pot until the water becomes cold.
