Stays moist for days: The secret to the best recipe for date and walnut bread from your own oven

For its unique flavor, sweet dates and crunchy walnut kernels are combined directly in the dough.

  • 250 g Buttermilch
  • ½ Würfel frische Hefe (21 g)
  • 500 g Weizenmehl (Type 550)
  • 1 TL Zucker
  • ¾ EL Salz
  • 40 g getrocknete entsteinte Datteln
  • 40 g Walnusskerne
  • Außerdem: Mehl zum Arbeiten

  1. Die Buttermilch leicht erwärmen. Die Hefe zerbröckeln, unter Rühren in der Buttermilch auflösen. Mehl, Zucker und Salz in einer Schüssel mischen. Die Hefe-Buttermilch mit der Butter hinzufügen und alles zu einem glatten, leicht klebrigen Teig verkneten. Bei Bedarf etwas Buttermilch ergänzen. Den Teig abgedeckt an einem warmen Ort ca. 30 Min. gehen lassen.
  2. Datteln und Walnusskerne hacken und unter den Teig kneten. Erneut abgedeckt an einem warmen Ort ca. 60 Min. gehen lassen.
  3. Den Teig auf der bemehlten Arbeitsfläche zu einem runden Laib formen und weitere ca. 30 Min. ruhen lassen. Den Backofen auf 220°C vorheizen. Den Laib auf ein mit Backpapier belegtes Backblech legen, mit etwas Wasser beträufeln und im Ofen in 45- 50 Min. goldbraun backen. Bei Bedarf mit Backpapier abdecken. Das Brot auf einem Kuchengitter auskühlen lassen.

  • 250 g buttermilk
  • ½ cube of fresh yeast (21 g)
  • 500 g wheat flour (type 550)
  • 1 tsp sugar
  • ¾ tbsp salt
  • 40 g dried, pitted dates
  • 40 g walnut kernels
  • Also: flour for working
  • Gently warm the buttermilk. Crumble the yeast and dissolve it in the buttermilk, stirring constantly. Mix the flour, sugar, and salt in a bowl. Add the yeast-buttermilk mixture and the butter, and knead everything into a smooth, slightly sticky dough. Add a little more buttermilk if needed. Cover the dough and let it rise in a warm place for about 30 minutes.
  • Chop the dates and walnuts and knead them into the dough. Cover again and let rise in a warm place for about 60 minutes.
  • Shape the dough into a round loaf on a floured work surface and let it rest for about 30 minutes. Preheat the oven to 220°C (425°F). Place the loaf on a baking sheet lined with parchment paper, sprinkle with a little water, and bake in the oven for 45-50 minutes, or until golden brown. Cover with parchment paper if necessary. Let the bread cool on a wire rack.
