What's the secret to the density of vegetables?
The key here is to double-boil the vegetables before finally filling them with brine. This allows the vegetables to adapt to the temperature, removes excess air from the tissues, and prepares them for canning, preventing them from becoming soft in the jar. Citric acid plays a crucial role: it acts as a stabilizer, preserving the vibrant color and firmness of the vegetables' structure, preventing them from becoming soft.
Vegetables: green tomatoes (3-4 pcs.), cucumbers (3-4 pcs.), sweet peppers (1/3 pcs.).
For the marinade, per 1 liter of water: salt - 2 tbsp., sugar - 2 tbsp.
Spices and preservatives: citric acid - 1 tsp (divide among jars, put an incomplete spoon in each), black peppercorns - 1 tsp, bay leaves - 2 pcs.
Aromatics: 1 dill umbrella, 1 currant leaf, 2 cloves of garlic, chili pepper to taste (about 1/3 of the pod).
The process begins with preparing the herbs. As canning and preservation specialist Natalia Guseva notes, pre-baking the dill and leaves with boiling water helps remove excess air and prepare them for sterilization.
