  • 1 cebolla blanca mediana picada finamente

Curried Mushroom Recipe

  • 215 Kcal
  • 500 grams of fresh mushrooms can be button or Portobello mushrooms
  • 1 medium white onion, finely chopped
  • 2 grated garlic cloves
  • 1 piece (2 cm) of grated fresh ginger
  • 400 ml of coconut milk, a can, or cooking cream (milk cream)
  • 2 tablespoons of mild curry powder or Madras curry powder, according to your taste
  • 1 teaspoon of turmeric
  • 1/2 teaspoon ground cumin
  • 2 tablespoons of olive oil or coconut oil
  • Clean the mushrooms with a damp cloth to remove any dirt. Don't wash them under running water, as they absorb water. Slice them thickly or quarter them if they are very large.
  • Heat a large skillet over high heat with a tablespoon of oil. Add the mushrooms and let them brown without stirring too much for 5 minutes. This step is vital to achieve the Maillard reaction and prevent them from releasing water later. Remove and set aside.
  • Reduce the heat to medium and add the other tablespoon of oil. Sauté the chopped onion for 6 minutes until translucent and beginning to brown slightly.
  • Add the grated garlic and ginger. Cook for 1 more minute until they release their aroma, being careful not to burn the garlic so it doesn't become bitter.
  • Add the curry, turmeric, and cumin. Stir for 30 seconds to toast the spices and release their essential oils.
  • Pour in the coconut milk or cream. Stir well to combine the sautéed vegetables and spices with the liquid. Bring to a gentle boil.
  • Add the browned mushrooms to the pan. Cook everything together over medium-low heat for 8 minutes to allow the sauce to thicken and the flavors to meld.
  • Turn off the heat, add the lemon juice, and adjust the salt and pepper. Scatter the fresh cilantro on top just before serving.

Some tips for this recipe

  • To ensure the mushrooms are golden brown and not rubbery, the pan must be very hot before adding them. Also, if you overcrowd the pan with mushrooms, the temperature will drop and they will start releasing liquid instead of sealing. Cook them in two batches if necessary.
  • If you decide to use heavy cream instead of coconut milk, always add it at the end and don't let it come to a rolling boil. This prevents the fat from separating and the sauce from curdling. A splash of water or vegetable stock can help thin the sauce if it becomes too thick.
  • The choice of curry completely changes the dish. Commercial yellow curry is usually mild and sweet. If you're looking for something spicier, Madras curry adds a noticeable kick. If you have red or green curry paste, you can use that too, but start with just a teaspoon because they're much more concentrated.
  • You can enhance the dish by adding a handful of fresh spinach in the last minute of cooking. The residual heat will cook them perfectly without them losing their bright green color.

Mushroom varieties for this recipe

Although the common mushroom, the classic white one you get in supermarkets, works wonderfully, you can elevate the dish by mixing different types.

Portobello mushrooms provide a meatier texture and an earthier flavor that stands up very well to the spiciness of the curry.

Shiitake mushrooms are another excellent choice if you're looking for a deeper, umami-Asian flavor profile.

If you use oyster mushrooms, remember that they cook much faster, so you should add them almost at the end of the process so they don't fall apart.

What to serve with

  • Cooked basmati rice with a couple of cardamom pods for an authentic aroma.
  • Freshly made naan bread or lightly toasted wheat tortillas to soak up the sauce.
  • White quinoa for an option with more protein and fiber.
  • A fresh cucumber and yogurt salad (raita) to help counteract the heat of the spices.

How to store and reheat this dish

Store the curried mushrooms in an airtight container in the refrigerator. They will keep perfectly for up to 3 days. As they cool, the sauce will thicken considerably due to the fats in the coconut milk or cream.

To reheat, use a saucepan over low heat and add a couple of tablespoons of water or milk to restore the original creaminess.

Avoid using the microwave at full power because it can leave the mushrooms with a rubbery texture. Although, if I were you, I wouldn't use the microwave to reheat them.

Frequently Asked Questions – FAQs

How do I prevent the sauce for curried mushrooms from becoming watery?

The trick is to sear the mushrooms on their own over very high heat at the beginning of the recipe. By sealing them, you create a barrier that keeps the juices inside the mushroom and allows the coconut or cream sauce to thicken properly without diluting.

Which type of curry is better: powder or paste?

Curry powder is more affordable and easier for beginners to measure. Curry paste (especially Thai) is more intense and aromatic, but requires thorough frying in oil to bring out its flavors before adding liquids.

Can this recipe be made without coconut milk or cream?

Yes, you can use plain Greek yogurt. To prevent it from curdling, whisk it well before adding it, and always do so with the heat off or very low, incorporating it gradually at the end of cooking.

Can I use canned mushrooms for this recipe?

It's not ideal. Canned mushrooms are already cooked and have a high water content, so they won't brown properly and the final texture will be inferior. It's best to use any fresh mushrooms you can find at the market.

Add a little more coconut milk or a teaspoon of brown sugar or honey. The sweetness and fat help neutralize the capsaicin in the curry and balance the flavor.
