“End of Summer” soup with lots of vegetables and pistou

Fennel Knolle (approx. 250 g)

Ingredients · Servings 4
  • 150 g Dinkelkorn
  • Salz
  • 1 Blumenkohl
  • 300 g Möhre
  • 1 Fenchel-Knolle
  • 150 g grüne Bohne
  • 2 Maiskolben
  • 400 g Mangold
  • 300 g Kohlrabi
  • 200 g Staudensellerie
  • 5 Frühlingszwiebel
  • 6 Tomate
  • 5 El Olivenöl
  • 1 l Gemüsefond
  • 10 Stiele glatte Petersilie
  • 1 Bund Basilikum
  • 15 g italienischer Hartkäse
  • 30 g Gruyère
  • 30 g Pinienkern
  • Meersalz
  • 80 ml Olivenöl
Method · 1 h
  1. Dinkel in leicht gesalzenem Wasser aufkochen und zugedeckt bei schwacher Hitze ca. 20 Minuten weich garen. Beiseitestellen.
  2. Blumenkohl putzen, Strunk und Blätter entfernen. Kohl in ca. 3 cm große Röschen schneiden. Möhren putzen, schälen, in 5 mm dicke Scheiben schneiden. Fenchel putzen, vierteln, den Strunk entfernen und in 3 cm große Stücke schneiden. Bohnen putzen, waschen und quer halbieren. Maiskörner mit dem Messer von den Kolben schneiden. Mangold waschen und gut trocken tupfen. Aus den Blättern die Stiele keilförmig herausschneiden. Stiele in 1 cm breite Stücke, Blätter in 2 cm große Stücke schneiden. Kohlrabi schälen und in 2 cm große Würfel schneiden. Staudensellerie putzen, entfädeln und in 2 cm große Stücke schneiden. Frühlingszwiebeln putzen, waschen, das Weiße und Hellgrüne in 3 cm lange Stücke schneiden. Tomaten waschen, halbieren, Stielansätze entfernen. Tomaten in 2 cm große Würfel schneiden.
  3. Olivenöl in einem großen Topf erhitzen. Gemüse bis auf die Tomaten hineingeben und bei mittlerer Hitze unter Rühren ca. 8 Minuten andünsten. Mit Salz würzen und mit Gemüsefond auffüllen. Tomaten zugeben und zugedeckt bei schwacher Hitze 15—20 Minuten garen.
  4. Basilikumblätter von den Stielen zupfen. Beide Käse fein reiben. Basilikum, geriebenen Käse, Pinienkerne, 1 Prise Salz und Olivenöl im Mixer fein pürieren.
  5. Petersilienblätter von den Stielen zupfen, fein schneiden und mit dem gekochten Dinkel in den Eintopf geben. Gut verrühren. Gemüseeintopf in tiefen Tellern mit 1 El Pistou servieren.
  • Bring the spelt to a boil in lightly salted water, then cover and simmer over low heat for about 20 minutes until tender. Set aside.
  • Clean the cauliflower, removing the core and leaves. Cut the cauliflower into florets about 3 cm in diameter. Clean and peel the carrots, then cut them into 5 mm thick slices. Clean the fennel, quarter it, remove the core, and cut it into 3 cm pieces. Clean and wash the green beans, then halve them crosswise. Cut the corn kernels off the cobs with a knife. Wash the Swiss chard and pat it dry thoroughly. Cut the stems out of the leaves in a wedge shape. Cut the stems into 1 cm wide pieces and the leaves into 2 cm pieces. Peel the kohlrabi and cut it into 2 cm cubes. Clean the celery, remove any strings, and cut it into 2 cm pieces. Clean and wash the spring onions, then cut the white and light green parts into 3 cm pieces. Wash the tomatoes, halve them, and remove the stems. Cut the tomatoes into 2 cm cubes.
  • Heat olive oil in a large pot. Add all the vegetables except the tomatoes and sauté over medium heat for about 8 minutes, stirring occasionally. Season with salt and add the vegetable stock. Add the tomatoes and simmer, covered, over low heat for 15–20 minutes.
  • Pluck the basil leaves from the stems. Finely grate both cheeses. Blend the basil, grated cheese, pine nuts, a pinch of salt, and olive oil in a food processor until smooth.
  • Pluck the parsley leaves from the stems, chop them finely, and add them to the stew along with the cooked spelt. Stir well. Serve the vegetable stew in deep bowls with 1 tablespoon of pistou sauce.

Pistou is a cold, aromatic herb sauce from Provence. It is traditionally made from fresh basil, garlic, olive oil, and salt into a flavorful paste. Depending on the family recipe, Parmesan, other hard cheeses, or almonds may also be added.
