Freeze-dried ice cream: what it is, why it's so popular, and where to try it in Russia
Freeze-dried ice cream is experiencing a renaissance.
Essentially, it's regular ice cream with all the moisture removed using freeze-drying (lyophilization). The product is frozen, placed in a vacuum chamber, and the ice turns into vapor, bypassing the liquid phase. The moisture is removed, but the texture, flavor, color, and up to 95% of the nutrients remain.
The result is light, crisp cubes reminiscent of meringue. They don't melt, don't stain your hands, and don't require refrigeration. This dessert has a shelf life of up to three years.
Why is this a trend?
Freeze-dried ice cream is experiencing a renaissance. In early 2025, searches for it were among the fastest-growing dessert categories, according to Google Trends. Interest is particularly high in the US, Europe, and the Middle East.
Here are the main reasons why this dessert is gaining more and more attention:
Russian production: Tyumen and Moscow region
In Russia, freeze-dried ice cream is already produced in at least two regions.
In Tyumen, the factory produces it in 19 flavors: classic ice cream, yogurt, fruit, and even with added vegetables—so children get vitamins even in a sweet treat.
Our ice cream is based on dairy products: yogurt, dry milk, prebiotics, freeze-dried fruits, berries, and vegetables. We've developed a total of 19 flavors, including ice cream, yogurt, and fruit. Since not all children like them, we've disguised the vegetables in ice cream. This preserves all their nutritional value, including vitamins and minerals.

It looks like airy meringue, but the taste and nutritional value are like real ice cream. This treat doesn't require refrigeration and is easy to transport—it's been sent in humanitarian aid more than once.
In Shchyolkovo, near Moscow, confectioner Valentina Kim has also launched production of a non-melting dessert at her factory. She plans to expand her product range to include exotic fruits.
Where it might be useful
Freeze-dried ice cream isn't just a fun treat. It has some very practical uses:

- As a healthy snack for children and adults - retains vitamins and natural flavor.
