Pork souvlaki with flatbread

Souvlaki is a Greek version of fast food.

Ingredients · Servings 4
  • Pork souvlaki
  • 2 tablespoon olive oil
  • 2 tablespoon white vinegar
  • 2 clove garlic, crushed
  • 1/2 cup lightly packed fresh mint leaves, chopped
  • 2 teaspoon finely grated lemon rind
  • freshly ground black pepper
  • 800 gram pork scotch fillet, cut into 2cm cubes
  • flatbread, curly endive, sliced red onion and tzatziki dip, to serve
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil, extra
  • Flatbread
  • 4 cup (600g) plain flour
  • 1 teaspoon salt
  • 100 gram butter, chopped
  • 1 1/2 cup (375ml) milk
Method · 40 min
  1. Combine oil, vinegar, garlic, mint, lemon rind and pork in a large bowl. Season. Refrigerate for at least 30 minutes or longer if possible.
  2. Meanwhile, to make flatbread, combine the flour and salt in a bowl. Heat the butter and milk in a small saucepan until the butter is just melted. Make a well in the centre of the flour and add butter mixture, stirring and gradually bringing the flour in from the sides. Mix to a soft dough. Knead the dough for at least 5 minutes on a floured surface, until it's stretchy. If the dough is too sticky, add a little more flour. This process can also be done in a food processor or with an electric mixer using a dough hook. Wrap the dough in plastic; stand at room temperature for about 30 minutes.
  3. Heat a barbecue (or grill or grill pan) on high. Thread the pork onto skewers (see tips). Cook pork, turning occasionally, for 10 minutes or until well charred all over and just cooked through. Transfer skewers to a plate; cover with foil to keep warm.
  4. Serve pork skewers with flatbread, endive, onion and tzatziki. Drizzle with combined lemon juice and extra olive oil.

Souvlaki is a Greek version of fast food. Marinated meat is cooked on the skewer horizontally over a fire, though you can also use vegetables. Souvlaki can be eaten plain straight off the skewers, or as we’ve done here served with fresh salad and tzatziki. You could also wrap the ingredients in flatbread or pitta wraps, to make a gyro-style meal.

How to prepare the skewers

You will need 8 bamboo or metal skewers for this recipe. Soak the bamboo skewers for 10 minutes in boiling water before using to prevent them burning during cooking; oil metal skewers to prevent sticking.

Make a quick homemade tzatziki

To make a quick homemade tzatziki, combine Greek yoghurt with grated and drained cucumber, chopped fresh dill, lemon juice, salt and pepper.
