Quark, cream, and blueberry cake

Quark-cream mixture vs. gelling sugar 2:1

  • 150 g Gelierzucker 2:1
  • 300 g Blaubeere
  • 4 Blätter weiße Gelatine
  • 250 g Sahnequark
  • 50 g Zucker
  • 1 Tl Bio-Zitronenschale
  • 2 El Zitronensaft
  • 200 ml Schlagsahne
  • 60 g Pistazienkern
  • 40 g Mehl
  • 2 Bio-Ei
  • 50 g Zucker
  • Salz
  • 200 g Blaubeere
  • Puderzucker
Method · 1 h 25 min
  1. Für die Quark-Sahne-Masse Gelierzucker in eine Schüssel geben, gut durchrühren und mit den Blaubeeren mischen. In einem hohen Topf aufkochen und unter Rühren 3 Minuten sprudelnd kochen. Das Kompott mit dem Schneidstab fein pürieren und durch ein Sieb streichen. Abkühlen lassen.
  2. Für den Biskuit Pistazien im Blitzhacker sehr fein zerkleinern. Mehl und Pistazien mischen, durch ein mittelfeines Sieb geben. Eier, Zucker und 1 Prise Salz mit den Quirlen des Handrührers mindestens 8 Minuten cremig-dicklich rühren. Pistazienmehl mit dem Schneebesen locker unterheben. Teig in eine mit Backpapier ausgelegte Springform (20 cm Ø) füllen und glatt streichen.
  3. Biskuit im vorgeheizten Backofen auf der 2. Schiene von unten bei 180 Grad (Gas 2-3, Umluft 160 Grad) 20-25 Minuten backen. In der Form auf einem Gitter abkühlen lassen. Mit einem Messer aus der Form lösen und waagerecht halbieren. Boden auf eine Platte legen und mit dem Springformring umspannen.
  4. Gelatine in kaltem Wasser einweichen. Quark, Zucker, Zitronenschale und -saft glatt rühren. Tropfnasse Gelatine in einem kleinen Topf bei milder Hitze auflösen. 4 El Quarkmasse unter die Gelatine rühren und mit der restlichen Quarkmasse verrühren. Sahne steif schlagen und unterheben. Quarkmasse auf den Biskuitboden geben. Blaubeerkompott glatt rühren und esslöffelweise unter die Quarkmasse heben (so wird die Marmorierung besonders schön). Quarkmasse mit dem oberen Biskuitboden belegen und leicht andrücken. Mit Klarsichtfolie abdecken und mindestens 4 Stunden (am besten über Nacht) kalt stellen.
  5. Torte mit einem Messer aus der Form lösen. Blaubeeren auf die Torte geben und mit 1 El Puderzucker bestäubt servieren.

1 tsp organic lemon zest (finely grated) 1 tbsp lemon juice

ml ml whipped cream sponge cake with pistachio kernels

flour, organic eggs (size M), sugar

Salt also

blueberries (for garnish), icing sugar (for dusting)

preparation

  • For the quark and cream mixture, put the gelling sugar in a bowl, stir well, and mix with the blueberries. Bring to a boil in a tall pot and boil vigorously for 3 minutes, stirring constantly. Puree the compote finely with an immersion blender and pass it through a sieve. Let it cool.
  • For the sponge cake, finely chop the pistachios in a food processor. Mix the flour and pistachios, then sift through a medium-fine sieve. Beat the eggs, sugar, and a pinch of salt with an electric mixer for at least 8 minutes until creamy and thick. Gently fold in the pistachio flour with a whisk. Pour the batter into a 20 cm (8-inch) springform pan lined with parchment paper and smooth the surface.
  • Bake the sponge cake in a preheated oven on the second rack from the bottom at 180°C (gas mark 2-3, fan oven 160°C) for 20-25 minutes. Let it cool in the tin on a wire rack. Loosen it from the tin with a knife and slice it horizontally in half. Place the bottom layer on a plate and secure it with the springform ring.
  • Soak the gelatin in cold water. Stir together the quark, sugar, lemon zest, and lemon juice until smooth. Dissolve the still-damp gelatin in a small saucepan over low heat. Stir 4 tablespoons of the quark mixture into the gelatin, then mix in the remaining quark mixture. Whip the cream until stiff peaks form and fold it in. Spread the quark mixture onto the sponge cake base. Stir the blueberry compote until smooth and fold it into the quark mixture a tablespoon at a time (this will create a beautiful marbled effect). Top the quark mixture with the remaining sponge cake layer and press down lightly. Cover with plastic wrap and refrigerate for at least 4 hours (preferably overnight).
  • Loosen the cake from the pan with a knife. Place blueberries on top of the cake and serve dusted with 1 tablespoon of powdered sugar.
