Crispy Delicata Squash Rings
These simple-to-prep crispy delicata squash rings are a delicious way to celebrate the flavors of fall.
- 2 small delicata squash (about 1-1/2 pounds), seeded, sliced in 1/2-in. rounds
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon pepper
- 1/8 teaspoon crushed red pepper flakes
- 1/3 cup freshly grated Parmesan cheese
- Preheat the oven to 425°F. Line a baking sheet with parchment and set aside. Place the rings in a large bowl. Add the olive oil and toss to coat. Sprinkle with Italian seasoning, salt, garlic powder, onion powder, pepper and crushed red pepper flakes. Toss again to coat.
- Spread the squash in a single layer on the prepped baking sheet. Generously sprinkle each squash ring with Parmesan cheese. Roast 25 to 30 minutes or until golden brown and tender. Serve immediately.
While I am a huge fan of decorative gourd season (IYKYK), the types of winter squash that I really love are the edible ones. Whether it’s a creamy butternut squash soup, a wild rice-stuffed acorn squash or a spaghetti squash meatball casserole, I am all in. My absolute favorite way to enjoy winter squash, however, is roasting it. The roasting process really enhances the squash’s flavor—plus, it’s hard to beat that caramelized texture.
These crispy delicata squash rings are a new favorite. The squash is sliced, then seasoned with a combination of herbs and spices. Each ring is topped with a generous amount of grated Parmesan cheese, which ensures that each crispy bite is packed with flavor.
Ingredients for Crispy Delicata Squash Rings
- Delicata squash: This type of winter squash has a cylindrical shape and pale yellow skin with green stripes. When cooked, its orange flesh has an earthy flavor that tastes similar to sweet potatoes. Because it has a thin edible skin, you don’t need to peel this squash. For this recipe, slice the squash into rounds, then remove the seeds in the center to form rings. You can also opt to make half moons by simply slicing the squash in half, using a spoon to scoop out the seeds and cutting each half crosswise into 1/2-inch slices.
- Olive oil: This flavorful oil is used to roast the squash and helps the seasonings adhere to the rings. Use regular olive oil rather than extra virgin olive oil.
- Seasonings: The squash rings are seasoned with coarse salt, black pepper, Italian seasoning, garlic powder, onion powder and crushed red pepper flakes.
- Parmesan cheese: Each squash ring is sprinkled generously with grated Parmesan cheese to achieve its crispy texture.
