Bake fluffy breakfast rolls from cottage cheese completely without flour

For many, a warm pastry in the morning is an essential part of a good start to the day. When time is short for a complicated yeast dough, we often turn to clever alternatives. One particularly interesting option is made entirely without traditional wheat flour. Instead, the base is cottage cheese.

  • 200g cottage cheese
  • 2 eggs (size M)
  • 130 g rolled oats
  • 30 g grated Parmesan (or mountain cheese)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp dried Italian herbs 🛒
  • 1 small grated carrot
  • 40 g mixed kernels and seeds (for sprinkling, e.g. sesame and pumpkin seeds)

  1. Preheat the oven to 180 °C (top and bottom heat).
  2. Put the cottage cheese, eggs, oats, grated cheese, baking powder, salt, herbs, parsley and grated carrot into a bowl.
  3. Mix all ingredients thoroughly and let the mixture soak for about 5 minutes.
  4. With damp hands, shape the dough into six equally sized rolls. Re-moisten your hands if necessary to prevent the dough from sticking.
  5. Sprinkle the kernels and seeds onto a plate and gently press the bread rolls into them so that the surface is covered.
  6. Place the dough pieces on a baking sheet lined with parchment paper and bake them in a preheated oven for about 30 minutes until golden brown.
  7. Let the cottage cheese rolls cool briefly before serving.

Recipe for cottage cheese rolls without flour

For this pastry, you only need a handful of ingredients from your pantry and refrigerator. The cottage cheese provides the necessary moisture and contributes a very mild flavor. To prevent the dough from spreading in the oven, eggs act as a binder. They ensure the necessary stability and hold all the components firmly together. Rolled oats serve as the dry base. They absorb excess liquid and give the dough structure. Finely grated Parmesan cheese and a grated carrot add depth of flavor. The carrot also makes the pastry wonderfully moist. A little baking powder helps it rise. Various seeds and kernels round out the recipe and add a slight crunch to the crust.

The basic dough can be wonderfully adapted to your own taste. If you prefer a savory version, simply mix fresh or dried herbs into the mixture. Thyme, rosemary, or a little oregano go perfectly with the subtle cheesy flavor. If you prefer a sweet breakfast, you can easily modify the recipe. In this case, omit the Parmesan, herbs, and salt. Instead, knead a pinch of cinnamon, a little vanilla extract, and a handful of coarsely chopped nuts into the rolled oats. This creates a neutral to slightly sweet base for jam or honey.

Cottage cheese is often enjoyed on its own or used as a protein-rich addition to salads. However, it reveals entirely different qualities when baked. The small granules don't melt completely during baking, but rather blend gently with the oats and eggs. This traps a lot of moisture inside. The result is a remarkably moist crumb that doesn't dry out even after cooling. At the same time, the combination of cheese and protein ensures that the surface browns beautifully in the hot oven. This creates a wonderful contrast between a firm crust and a soft interior.

These flourless cottage cheese rolls taste best when they're fresh from the oven and still slightly warm. A pat of butter melts instantly on the cut half. They're also delicious topped with creamy spreads, a few slices of avocado, or fresh vegetables. If you're pressed for time during the week, you can easily prepare them the night before. Simply bake the portions and store them in an airtight container. The next morning, a quick toasting or a few minutes in a hot oven is all it takes. This will crisp the crust nicely and warm the inside. That way, you'll have a nutritious breakfast ready even on busy days.
