Orzo with chicken and mushrooms
This creamy orzo with chicken, mushrooms, and spinach is one of those dishes that is nice and easy, yet just a little bit different. Everything goes into one pan, and dinner is on the table in about 30 minutes.
Ingredients · Servings 4
- 300 gr orzo
- 350 g chicken breast or chicken thigh fillet
- 250g mushrooms
- 150 g (fresh) spinach
- 1 ui
- 2 cloves of garlic
- 750 ml chicken stock
- 100 g cream cheese
- 50 g Parmesan cheese
- 1 tsp Italian herbs
- 1 tsp paprika
- 1 tsp mustard
- salt and pepper
- olive oil
Method · 30 min
- Cut the chicken into pieces, the mushrooms into slices, and finely chop the onion and garlic.
- Season the chicken with paprika, pepper, and salt.
- Pour a splash of oil into a large pan and fry the chicken until golden brown on all sides. Remove from the pan if necessary.
- Fry the mushrooms over medium-high heat until golden brown. Then add the onion and garlic and fry for another 2-3 minutes.
- Add the Italian herbs and orzo, and fry the orzo for about a minute.
- Pour in the broth and add the chicken back in. Let the orzo simmer gently for 10-12 minutes. Stir regularly so that the orzo does not stick to the bottom. Add a splash of extra water or broth if it becomes too dry.
- Stir in the cream cheese, mustard, and Parmesan cheese.
- Finally, add the spinach little by little and let it wilt.
- Taste and season further with salt and pepper if necessary. Serve with some extra Parmesan cheese.
Creamy orzo with one-pan chicken
The great thing about this recipe is that you simply cook the orzo in the same pan as the rest of the ingredients. This not only saves on washing up but also ensures the orzo develops plenty of flavor. The mushrooms and spinach pair perfectly with the creamy sauce, and the chicken makes the dish nice and filling. Optionally, finish the orzo with some grated Parmesan cheese.
