Chicken with peppers and pumpkin

Chicken with paprika and pumpkin is an autumn variation on a popular Czech dish. Simply add chopped pumpkin to the sauce base and simmer gently with the meat. The pumpkin will naturally thicken the sauce, so you can simply blend it, thin it with cream and it's done.

Ingredients · Servings 4
  • 6 chicken thighs
  • 600-700 g Hokkaido pumpkin (1/2 pumpkin)
  • 1 large onion
  • 2 tablespoons sweet ground paprika
  • 1 tablespoon smoked ground paprika
  • 1/2 teaspoon crushed cumin (or more to taste)
  • 1/2 teaspoon dried garlic (or more to taste)
  • ground black pepper
  • 1 tablespoon tomato paste
  • 300-500 ml chicken stock (or water)
  • 150-200 ml whipping cream (as needed)
  • 2 tablespoons olive oil
  • 20 g butter
  • salt
  • For decoration:
  • fresh red pepper
  • freshly ground pepper
Method · 1 h 50 min
  1. Clean the pumpkin, but do not peel it. Scoop out the seeds and soft fibers and cut the rest into cubes. Peel the onion and chop finely.
  2. Clean the meat and cut off excess fat. Season with salt, pepper and sweet ground paprika.
  3. Heat 1 tablespoon of oil and butter in a large saucepan. Fry the pieces of meat until golden brown on both sides, remove from the saucepan and set aside.
  4. Add the remaining tablespoon of oil to the baking dish and fry the onion until golden brown. Add the chopped pumpkin to the onion, add a tablespoon of tomato paste, the remaining sweet pepper, smoked paprika, cumin, dried garlic and fry everything.
  5. Add the browned pieces of meat and any juices the meat has released to the vegetable base and pour in about 300 ml of broth. Cover with a lid and simmer for about 75 minutes, until the meat is tender and falling off the bone. Check during the simmering process and add more broth if necessary.
  6. Remove the finished meat from the pot, remove the skin and shred the meat.
  7. Blend the sauce until smooth, thin with broth if necessary, thicken with cream and add salt and pepper to taste.
  8. Put the shredded meat back into the sauce and heat everything briefly.
  9. Serve the sauce with pasta, dumplings or gnocchi.
