Vegan burger: learn how to make it with white beans and spinach
If you're looking for a different dinner option, this vegan white bean and spinach burger could be a good choice. The recipe combines simple ingredients and yields six burgers.
Besides white beans and spinach, the dish includes leeks, onions, bell peppers, herbs, and spices. After mixing everything together, simply shape the burgers and bake them until golden brown.
Vegan white bean burger
Preparation time: 2 hours. Yield: 6 units of 100 g each. Difficulty: medium.
Ingredients
- 200 g of white beans
- 300 g of spinach
- 100 g of chopped leek
- 30g chopped onion
- ½ red bell pepper, cut into small pieces
- 2 tablespoons of olive oil
- 2 tablespoons of parsley
- 1 teaspoon of cilantro
- ½ teaspoon of salt
- Black pepper to taste
- 1 teaspoon of sweet paprika
Preparation method
- Soak the white beans for at least 3 hours. Then drain the water.
- Place the beans in a pressure cooker and cover with water, leaving approximately two fingers' width above the beans. Bring to a boil over high heat, then reduce to medium heat. Cover and cook for about 30 minutes, or until the beans are very tender.
- Drain the cooking water and mash the beans until they form a puree.
- Wash the spinach leaves and steam them for a few minutes. Then, squeeze the leaves with your hands to remove excess water and chop finely.
- Mix the chopped spinach into the white bean puree.
- In a saucepan or frying pan, heat the oil and sauté the onion and leek. When they are golden brown, turn off the heat and season with salt, black pepper, and sweet paprika.
- Add the sautéed mixture to the bean and spinach purée. Add the chopped parsley and cilantro and mix well.
- Shape the hamburgers. If you want, use a ring mold to make them all the same shape.
- Arrange the hamburgers on a baking sheet greased with a little olive oil and bake in a preheated oven at 180°C until golden brown on both sides.
- Then, simply assemble the sandwich as you prefer and serve.
