Speculoos and chocolate chip cookies made in a Thermomix
If you like speculoos, you'll love these cookies! Their delicious, slightly caramelized and spicy flavor is right in the dough, plus there are generous chocolate chips.

- Speculoos - 120 grams
- Flour - 120 grams
- Baking powder - 1 teaspoon
- Butter - 90 grams
- Brown sugar - 80 grams
- Egg - 1
- Vanilla extract - 1 teaspoon
- Salt - 0.5 teaspoon
- Dark chocolate chips - 110 grams
Method · 55 min
- Place 120 grams of speculoos in the Thermomix bowl.
- Add the lid with the measuring cup
- Spray for 10 seconds/speed 10.
- Scrape the sides of the bowl with the spatula.
- Add 120 grams of flour to the Thermomix bowl.
- Add 1 teaspoon of baking powder to the Thermomix bowl.
- Add 90 grams of butter, cut into pieces, to the Thermomix bowl.
- Add 80 grams of brown sugar to the Thermomix bowl.
- Add 1 egg to the Thermomix bowl.
- Add 1 teaspoon of vanilla extract to the Thermomix bowl.
- Add ½ teaspoon of salt to the Thermomix bowl.
- Add the lid with the measuring cup
- Mix for 20 seconds/speed 4.
- Add 110 grams of dark chocolate chips to the Thermomix bowl.
- Add the lid with the measuring cup
- Mix for 10 seconds/speed 3.
- Transfer to a container and refrigerate, wrapped in plastic film for 30 minutes.
- Preheat the oven to 180°C.
- Line two baking sheets with baking paper. Form about 20 balls of dough and arrange them on the sheets, spacing them well apart. Flatten them very lightly with the palm of your hand.
- Place in the oven for 10 minutes at 180°C. (10 to 12 minutes, place the trays in the oven one after the other).
- Leave the cookies to rest for 5 minutes on the baking sheet after removing them from the oven, then transfer them to a wire rack and let them cool.
They're slightly crispy around the edges, still soft in the center, and above all, very easy to make in a Thermomix. A perfect recipe for an afternoon snack, with a coffee, or simply for the pleasure of having a box of homemade cookies on hand.
- Place 120 grams of speculoos in the Thermomix and pulverize for 10 seconds / speed 10. Then scrape the sides of the bowl with the spatula.
- Add 120 grams of flour, 1 teaspoon of baking powder, 90 grams of butter cut into pieces, 80 grams of brown sugar, 1 egg, 1 teaspoon of vanilla extract and ½ teaspoon of salt to the Thermomix. Mix for 20 seconds / speed 4.
- Add 110 grams of dark chocolate chips to the Thermomix and mix for 10 seconds / speed 3.
- Transfer the contents of the Thermomix into a container and then refrigerate, wrapped in plastic film for 30 minutes.
