Pumpkin and Cheese Casserole

Pumpkin is a symbol of autumn abundance and the fertile power of the earth. It's no wonder that the North American Indians, where pumpkins originated, used them in their rituals for prosperity and abundance. In the Chinese feng shui system, pumpkins are used to attract wealth and prosperity to the home.

  • Zucchini
  • Blue cheese
  • Fresh champignons
  • Tomato
  • Vegetable broth
  • Cream 20% (medium fat)
  • Olive oil
  • Chicken egg
  • Garlic
  • Dried basil
  • Salt
  • Ground black pepper

  1. Prepare the vegetables. Cut the pumpkin flesh into large slices. For this casserole, it's best to use young, thin-skinned zucchini. No need to peel this type; simply cut it into small slices.
  2. Wipe the mushrooms with a damp cloth and slice them. Remove the stems from the tomatoes. Cut the flesh into small cubes. Peel the garlic and crush it with the flat side of a knife.
  3. Heat oil in a large skillet (at least 26 cm in diameter). Add garlic and sauté until fragrant. Remove from the pan. Add pumpkin slices to the fragrant oil and sauté, stirring occasionally.
  4. After 5–7 minutes, add the zucchini, mushrooms, and tomatoes. Fry for another 5 minutes, then pour in the broth. Season with salt and pepper. Simmer over medium-high heat for 5 minutes.
  5. Beat the egg and cream with a mixer. Add crumbled cheese and dried basil. Season with salt and pepper. Transfer the stewed vegetables to a baking dish and pour the cheese mixture over them. Bake for 10 minutes at 180°C.
