Fish dish to prepare in advance: cod gratin
- 4 Trout(s)
- 1 Citron(s) jaune(s)
- 12 cloves of garlic
- 1 bunch of thyme
- 4 bay leaves
- 4 pinches of Herbes de Provence
- 8 tablespoons olive oil
- Salt and freshly ground pepper
- Ask your fishmonger to gut and scale your trout. Clean the inside and outside of your trout with clean water and dry them with paper towels.
- Preheat your oven to 240°C (gas mark 8). Wash and cut the lemon into fairly thick slices.
- Remove the stems from the thyme and roughly chop it. In a bowl, combine the thyme, salt, pepper, and olive oil. Then stuff the trout with half of the mixture and add the lemon slices, unpeeled garlic cloves, and bay leaves.
- Place them in an ovenproof dish and pour the remaining mixture over them. Bake for 10 minutes (or grill them). Once cooked through and nicely browned, sprinkle with herbes de Provence and serve piping hot with potatoes, rice timbale, grilled vegetables, a well-seasoned salad, or fresh pasta. Don't forget to offer lemon wedges! Lemon juice is always a welcome addition to fish.
