Fig Muffins

Fig muffins are little treats that pack a delicious punch! Soft and moist, these fresh fig muffins will bring all the flavor of summer into your home with a unique sweetness and a delicate, almost caramel-like flavor. We absolutely loved them; let me know if you like them too!

Ingredients · Servings 12 muffin
  • 4 eggs
  • 200 g of sugar
  • 60 g of seed oil
  • 125g of yogurt
  • 250 g of 00 flour
  • 10 g of baking powder
  • 5 figs
  • 1 grated lemon peel
Method · 20 min
  1. Prepare the dough: beat the eggs and sugar for at least 10 minutes, until light and fluffy. Then slowly whisk in the oil, then the yogurt, and finally the sifted flour and baking powder with the lemon zest.
  2. Peel the figs and cut them into quarters and then into pieces, trying not to break them.
  3. Finally, add the figs (leave a few pieces aside for decoration), mixing gently with a spatula so as not to break them.
  4. Divide the mixture into the muffin cups, filling them 3/4 full. Sprinkle the reserved fig pieces on top and bake for 20-25 minutes (always do the toothpick test) in a fan-assisted oven preheated to 190°C.
  5. The fig muffins are ready, let them at least cool before enjoying them.
