Vegan schnitzel
This vegan schnitzel is a modern, plant-based alternative to the classic dish and impresses with its crispy breading and savory seasoning. It's based on firm tofu, which provides a pleasant texture.
Ingredients for 2 people:
- 120 grams of firm tofu
- 150 grams of chickpea flour
- 50 grams of finely rolled oats
- 1 tablespoon cornstarch
- 1 tablespoon of salt
- 1 teaspoon sweet paprika powder
- 1 pinch of black pepper
- 100 milliliters of water
Ingredients for breading:
- 3 tablespoons breadcrumbs
- 1 tablespoon of pumpkin seeds (finely chopped)
- 150 milliliters of vegetable oil (for frying)
Recipe Preparation:
- First, coarsely grate the tofu into a large bowl using a vegetable grater. Add the chickpea flour, rolled oats, cornstarch, salt, paprika, freshly ground pepper, and water. Mix everything together to form a soft dough.
- Mix the breadcrumbs and pumpkin seeds in another bowl. Shape the dough into small schnitzels and coat them in the breadcrumb mixture.
- Then, heat enough oil in a large pan, fry the schnitzels evenly and golden brown for about 2-3 minutes per side, turning them several times.
- After frying, remove the schnitzels from the pan and place them on kitchen paper so that excess fat can drain off and the breading retains its crispness.
- Finally, serve the vegan schnitzel with potato salad and pumpkin seed oil as a side dish.
