Grilled watermelon with feta: the most refreshing starter for your barbecues

Watermelon is undoubtedly the queen of summer. It's impossible to resist a nice, chilled slice when the heat is on. We're used to enjoying it straight from the fridge, but today we're suggesting a twist.

Ingredients · Servings 4
  • 1 small watermelon (preferably seedless)
  • 1-2 tablespoons of extra virgin olive oil
  • 150g of feta cheese
  • 1 bunch of fresh mint leaves
  • 1 lime (juice and zest)
  • A pinch of coarse salt
  • Freshly ground black pepper
  • Optional: a touch of balsamic cream
  • Barbecue, gas (e.g. this one) or charcoal
Method · 10 min
  1. Cut the watermelon into slices about 2–3 cm thick or into triangles. Leave the rind on; this will help the pieces keep their shape and not fall apart on the barbecue.
  2. Dry the slices well with kitchen paper. Brush them lightly with olive oil on both sides to prevent sticking. Heat the grill to high heat and place the slices on it when it's very hot.
  3. Grill it for 2–3 minutes per side, until you see grill marks.
  4. Remove from the heat and place on a serving platter. Crumble the feta cheese over the top while the watermelon is still warm. Finish with chopped mint leaves, lime zest, a squeeze of lime juice, and, if desired, a drizzle of balsamic glaze.

It might seem strange at first glance, but I assure you it's a winning combination. The heat from the grill caramelizes the fruit's natural sugars, transforming its texture and enhancing its sweetness, which contrasts perfectly with the saltiness of the feta cheese. A touch of lime, olive oil, and fresh mint complete the dish.

How to grill watermelon with feta cheese
