Cranberry, Lemon, and Streusel Pie

Very tasty pie!

Ingredients · Servings 8–10
  • 2 eggs
  • 100 g butter
  • 100 g of sugar
  • 5 g baking powder
  • 300-350 g flour
  • 150 g lemon
  • 200 g lingonberries
  • 100-150 g of sugar
  • 100 g butter
  • 100 g of sugar
  • 150-200 g flour
Method
  1. Wash the lingonberries and let the water drain.
  2. Cut the lemon. Remove the seeds.
  3. Place in a blender.
  4. Grind. If you don't have a blender, you can put the lemon through a meat grinder.
  5. Add lemon to the lingonberries.
  6. Mix.
  7. Add sugar.
  8. Mix.
  9. Mix butter and sugar.
  10. Add flour. Rub the mixture with your hands to form crumbs.
  11. Mix butter and sugar.
  12. Add eggs.
  13. Mix.
  14. Add baking powder and flour. Knead the dough.
  15. Lightly grease the pan (I used a 29 cm diameter pan) with oil. Place the dough in it and make the sides.
  16. Place the filling on the dough.
  17. Sprinkle with streusel. Place in a preheated oven at 180 degrees Celsius. Bake for 40–45 minutes.

Tender dough, sour filling, crispy crust!

Instead of lemon, you can use lime, and instead of lingonberries, you can use cranberries or currants.

If you have a strong sweet tooth, add sugar to the filling to taste.

The specified amount of ingredients makes 8–10 servings.
