Carrots, with their wide range of uses from meals and salads to soups and desserts, have a delicate texture and can easily wilt even in the refrigerator. Leaving the green parts at the stem end of the carrot or storing them in unventilated bags are common mistakes that disrupt their moisture balance.

Cutting Off the Green Leaves and Pre-Preparation Steps: The first and most critical rule for keeping carrots fresh for a long time is to completely cut off the green, leafy stem immediately after purchase. Leaving the greens on will continue to draw moisture and water from the carrot's stem, causing the vegetable to wilt and soften quickly. Carrots, after being stripped of their leaves, should absolutely not be washed before storage; only the natural protective soil layer should be lightly removed. Washing can cause extra moisture to accumulate on the surface of the vegetable and lead to faster spoilage in the refrigerator. This simple pre-preparation step is the first line of defense in preserving the carrot's own juice and crispness.

Storing Carrots in Cold Water: The most effective way to keep peeled or chopped carrots crisp for a long time is by storing them in cold water. The paper towels provide the necessary moisture while preventing excessive moisture from accumulating and causing spoilage. It's important to use containers that allow for slight air circulation instead of completely airtight bags.
