Halloween verrines: lychee jelly and vegan pear mousse

  • 300 ml Lychee Juice
  • 15 Lychees
  • 4 Black Grapes
  • 1 teaspoon of agar-agar
  • 120g Silken Tofu
  • 1 Pear
  • 20 g Sucre blond complete
Method · 12 min
  1. Drain the lychees if they are in syrup, then check that they are pitted. Next, slip a black grape into several lychees to create a very realistic eye effect, perfect for Halloween. Distribute them in the bottom of 4 glasses, placing the side with the grape against the side so that the decoration remains clearly visible when serving.
  2. Pour the lychee juice into a small saucepan, then gradually whisk in the agar-agar to prevent lumps. Heat over medium heat, stirring constantly, until it comes to a boil. Let it boil for 1 minute to fully activate the agar-agar. This step is essential for a jelly that sets properly upon cooling.
  3. Carefully pour the warm lychee juice over the lychees arranged in the glasses. Do this slowly, using a small ladle or pitcher, so as not to disturb the fruit and to preserve the visual effect. Fill until the lychees are completely covered, then let it cool for a few minutes before placing the glasses in the refrigerator for at least 30 minutes.
  4. Peel the pear, remove the core, and then cut the flesh into pieces. Place them in a blender with the silken tofu and unrefined light brown sugar. Blend thoroughly until you obtain a smooth, light, and homogeneous texture. The mixture should be very creamy, without any lumps, to provide a pleasant contrast with the lychee jelly.
  5. Remove the verrines from the refrigerator once the jelly has set. Gently spread the pear mousse on top in an even layer, without pressing down so as not to break the jelly. Then return the verrines to the refrigerator for 30 minutes to 1 hour, so that the mousse firms up slightly and everything is nice and chilled when you serve it.
  6. Make sure the verrines are thoroughly chilled before serving. The visual effect of the lychees stuffed with grapes should show through the jelly, while the pear mousse provides a sweet and indulgent finish. Serve this Halloween dessert chilled, preferably in clear verrines, to fully appreciate its stunning and festive appearance.
