Tortilla-Omelette
preparation
For the tortilla omelet, thoroughly whisk the eggs, whole milk, and a pinch of salt in a bowl. Heat the clarified butter in a non-stick pan and pour in the egg mixture evenly. Cook over medium heat until the eggs are mostly set. Once the eggs are mostly set, carefully place the tortilla wrap on top.
Place a plate on top of the pan and carefully flip the omelet using the plate. Then, slide the tortilla omelet back into the pan. Cook the second side over medium heat for about 1–2 minutes. This will make the wrap slightly crispy and ensure the omelet is cooked through. Remove the finished tortilla omelet from the pan and spread it with cream cheese. Top with fresh lettuce leaves, tomato slices, ham, and cheese. Fold it over and serve immediately.
The tortilla omelet tastes especially good fresh and warm. The filling can easily be enhanced with additional ingredients such as bell peppers, cucumbers, onions, or herbs.
