Miku Hosts One-Night-Only Suntory Japanese Whisky Pairing Dinner

Vancouver, BC | Miku, ABURI Restaurants Canada’s Michelin Guide-recommended contemporary Japanese restaurant, invites guests to an evening dedicated to the art of Japanese whisky on Thursday, October 22, 2026 at 7 p.m. Taking place in Miku’s private Blue Sky Room, the one-night-only dinner features a multi-course dinner paired with whiskies of Suntory – from Toki and sashimi to Hibiki and wagyu, finishing with Yamazaki 12 and dessert. Reservations can be made online.

The pairings were curated by Miku’s bar manager Paul Brown together with head chef Martin Simicek. Brown notes, “Japanese whisky is about precision and restraint. Over the course of the evening, guests will have a chance to experience both how Suntory whisky drinks beautifully out of the bottle but also how well it performs in a variety of Japanese highballs. I worked closely with our chef to pair the delicate nuance of the whisky with star ingredients within the food, making sure that each expression tells a story in the glass.”

Tickets are $200++ per person and available via OpenTable. The evening begins with a welcome sparkling drink before moving through three Suntory whiskies poured on their own and three whisky cocktails. Each of the five courses will explore Japanese whisky in a different way.

Second Course sashimi Lost in Translation brown butter, honey & genmaicha highball.

Third Course A5 Iwate Wagyu Steak Hibiki Harmony, on ice.

Fourth Course Selection of signature oshis, rolls and nigiri AO World Whisky force-carbonated ginger Collins.

Dessert Apple Tarte Tatin Yamazaki 12.
