Classic plum pie

  • 25 dkg Flour
  • 7 dkg Sugar
  • pinch of Salt
  • 10 dkg of rice
  • 1 egg
  • 2 tbsp cold water
  • 70 dkg Plums
  • 4 ek Cukor
  • 2 tbsp Cinnamon
  • 1 lemon
Method · 1 h 10 min
  1. For the classic plum pie dough, mix the flour, sugar, salt, cold butter, eggs and cold water in a bowl. Knead quickly, then wrap in foil and refrigerate for 30 minutes.
  2. Meanwhile, wash the plums, remove the pits, cut them in half, sugar them, sprinkle with cinnamon, and add the lemon zest and juice.
  3. Roll out the dough thinly, place it in the pie pan, making sure to cover the sides with dough. Cut off the overhanging parts and pile the spicy, sweet plums on the base. Use the remaining dough to make a lattice on top of the plums.
  4. Bake at 190 degrees for 35 minutes. Serve the classic plum pie sprinkled with powdered sugar. It goes well with vanilla ice cream.
