Pizza met mortadella en burrata

- 1000 g flour
- 500 ml cold water
- 3 g droge gist
- 200 ml water
- 25 g salt
- 400 g ricotta
- 300 g grated mozzarella
- 5 bowls of burrata
- 1 handful of arugula
- 150 g pistachios
- 2 cloves of garlic
- 50 g Parmesan cheese
- 1 bunch of basil
- lemon juice
- 100 ml olive oil
- salt and pepper

- Mix flour, water, and yeast in a bowl and cover. Let rest on the counter for 1 hour to activate the yeast.
- Mix well. Refrigerate for 16 hours before use.
- Mix the starter dough with flour and water to form a dough.
- Knead the dough for 10 minutes and add the salt halfway through.
- Roll the dough into a large ball and cover. Let the dough rise for an hour.
- Divide the pizza dough into 5 equal parts and roll into balls. Cover and let rise for 5 hours.
- Gently flatten the balls, but leave a thick edge of dough. Proceed with the toppings.
- Preheat the (pizza) oven to 350 °C.
- Spread the ricotta in a thin layer on the pizza dough and sprinkle with the mozzarella.
- Bake the pizza for 4-6 minutes.
- Remove the pizza from the oven and distribute the slices of mortadella.
- Place a ball of burrata on each pizza. Garnish with the pistachio pesto and a little arugula.
- Put all ingredients in a blender and blend until smooth to make a pistachio pesto.
