Gluten-free apple-cinnamon cookies (video recipe)
Gluten-free autumn cookies filled with apples, cinnamon, nuts and dark chocolate chips.
Ingredients · Servings 12
- gluten-free flour, 100 g (Liana cake mix)
- walnuts, 50 g ground
- ground cinnamon, 1 tsp
- baking powder, 1 tsp
- eggs, 2 pcs
- granulated sugar, 100 g
- vanilla extract, a little
- oil, 80 ml
- milk, 80 ml
- apples, 2 pcs
- hot chocolate, 50 g
- salt, a pinch
- butter, 30 g (for greasing the mold)
Method · 40 min
- Peel and grate the apples.
- Beat the eggs with the sugar and vanilla until light and fluffy. Add the vegetable oil and milk and mix well.
- In a separate bowl, combine the gluten-free flour, finely ground nuts, cinnamon, baking powder, and a pinch of salt. Gradually stir the dry ingredients into the liquid mixture and mix until everything is combined.
- Finally, stir in the grated apples and chopped chocolate.
- Grease the silicone mold thoroughly with melted butter. Sprinkle lightly with gluten-free flour.
- Fill the mold approximately ¾ full so that the dough does not overflow during baking.
- Bake in an oven preheated to 170 °C for approximately 20–25 minutes.
- After baking, let the cookies cool in the pan for 10–15 minutes and then carefully turn them out. Enjoy your meal.
