Rice and Meat Pie Recipe
This rice and meat pie is one of those homemade recipes that transforms a simple meal into something special. Its layers are soft and juicy, while the top browns in the oven for an irresistible finish.

- 1 1/2 cups of cooked white rice
- 200g of ground beef
- 1/2 small onion
- 1 clove of garlic
- 1 small ripe tomato
- 1 egg
- 1/2 cup shredded mozzarella cheese or double cream cheese
- 1 tbsp butter
- 1 tablespoon of oil
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 1 tbsp chopped parsley or cilantro

- Preheat the oven to 200°C.
- Finely chop the onion, garlic, and tomato. Heat the oil in a frying pan and sauté the onion for 2 minutes. Add the garlic and cook for another 30 seconds.
- Add the ground meat and cook over medium-high heat, breaking it up with a spoon to avoid large pieces.
- Add the tomato, cumin, paprika, salt, and pepper. Cook for 7-8 minutes, until the meat is cooked through and the sauce has reduced. Add the parsley or cilantro.
- Mix the cooked rice with the egg until combined. If the rice is too dry, you can add a tablespoon of milk to give it a softer texture.
- Grease a small ovenproof dish with butter. Place half of the rice in the dish and press down lightly to form a compact base.
- Distribute all the meat over the rice and spread it evenly.
- Cover with the remaining rice and press gently so that the cake retains its shape.
- Finish with the grated cheese and bake for 15-20 minutes, until the cheese is golden brown and the preparation looks firm.
- Let it rest for 5 minutes before cutting. Serve hot with a fresh salad or sautéed vegetables.
