Creamy leek risotto for cozy evenings

A steaming plate of leek risotto is pure comfort food. The combination of soft rice and a creamy sauce is simply delightful. If you happen to have a leek in your vegetable drawer, it's the perfect opportunity to prepare a true Italian classic.

Ingredients · Servings 4
  • 1 shallot
  • 2 cloves of garlic
  • 1 large leek
  • 2 tbsp olive oil
  • 400g risotto rice
  • 200 ml white wine (dry)
  • 700 ml vegetable broth
  • 50 g Butter (cold)
  • 50 g Parmesan or vegetarian alternative (grated)
  • salt and pepper
Method · 45 min
  1. Peel the shallot and garlic cloves. Wash the leek very thoroughly and cut it into rings.
  2. Heat the olive oil in a deep pan and sauté the onions and garlic until translucent. Add the leek and sauté briefly without letting it brown.
  3. Stir in the risotto rice and sauté it until it has a pearly sheen.
  4. Deglaze with the white wine and let it cook off.
  5. Now pour in the vegetable broth and cook the rice, covered, until it is cooked but still has a slight bite. Add more vegetable broth as needed.
  6. When the rice is al dente, add the butter in cubes and stir well. Mix in the Parmesan cheese and season with salt and pepper.

Leek risotto: delicious and easy

In many films, a baguette and the green end of a leek peek decoratively out of a paper bag when someone returns home from shopping. In real life, this stalk vegetable often leads a rather inconspicuous existence, patiently waiting for its moment. Yet leeks deserve far more attention. They bring a wonderful flavor and are incredibly versatile. They truly shine in hearty stir-fries and pair perfectly with rice.

Before the leeks go into the pan for the leek risotto, they need a little preparation. Fine sand often hides between the tightly packed leaves. It's best to cut the stalk lengthwise and wash it thoroughly under running water. Then you can slice the vegetable into thin rings. Leeks belong to the onion family and develop a pleasant sweetness when gently sautéed. They become wonderfully tender and form the ideal aromatic base for the rice dish.

For the right consistency, you need a suitable short-grain rice. Varieties like Arborio or Carnaroli release just the right amount of starch when cooked. The rice grains are first sautéed with the leeks in a little oil until translucent. This step is crucial for the final texture. The grains retain their kernels and don't overcook into mush. A generous splash of dry white wine then adds a touch of acidity and enhances the flavors of the vegetables.

Preparing a good leek risotto requires, above all, a bit of patience at the stove. Once the wine has reduced, add warm vegetable stock ladles at a time. The liquid should be almost completely absorbed by the rice before you add more. Constant stirring causes the rice grains to rub against each other. This releases the starch, which thickens the stock into a creamy sauce. After about twenty minutes, the rice will have reached the perfect balance of a creamy exterior and a slight bite inside.

The secret to the perfect texture lies in the final step of preparation. The Italians call this process mantecatura. Be sure to remove the pan from the heat before stirring in cold pieces of butter and freshly grated Parmesan cheese to the hot rice. The residual heat is perfectly sufficient to melt the cheese. Vigorous stirring creates a glossy and rich consistency. The tender leeks practically melt into this creamy base, making every bite a true delight.
