Recipe for rack of lamb with ginger-Marsala jus
1. For the rack of lamb, peel the ginger and dice it as finely as possible. Rinse the rack of lamb under cold water and pat dry. Heat 2 tablespoons of olive oil in a wide pan and sear the rack of lamb, along with the herbs and garlic cloves, on the fat side for about 2 minutes.
- 1 long rack of lamb with 10 exposed bones (approximately 800 g)
- 3-4 crushed garlic cloves
- 3-4 sprigs each of rosemary, sage and thyme
- 40 g fresh ginger
- 1-2 tsp Ras el-Hanout
- 5-6 tablespoons olive oil
- 175 ml Marsala
- 400 ml lamb stock (homemade or from a jar)
- 2 The Balsamic Alter
- Salt
- freshly ground black pepper

- Meat thermometer
- 1 red onion
- 2-3 sprigs of savory
- 2-3 tablespoons olive oil
- 150 g white cooked beans
- 300g sweet potatoes
- 400g mixed green beans (broad bush beans, Kenya beans, thick beans)
- Salt
- freshly ground black pepper
- For the rack of lamb, peel the ginger and dice it as finely as possible. Rinse the rack of lamb under cold water and pat it dry. Heat 2 tablespoons of olive oil in a wide pan and sear the rack of lamb, along with the herbs and garlic cloves, on the fat side for about 2 minutes. Then remove the meat and aromatics from the pan.
- For the jus, deglaze the pan with Marsala wine, then add ginger, ras el hanout, and lamb stock. Reduce to about 150 ml. Season the jus with salt, add balsamic vinegar, and whisk in 3–4 tablespoons of olive oil. Keep warm.
- Preheat the oven to 200°C (390°F). Place the lamb racks fat-side up on the work surface and shape them into a crown, ensuring the fat/meat side of the crown is on the inside. Tie the lamb crown tightly with kitchen twine twice around its widest point.
- Season the rack of lamb with salt and pepper, place it upright on a baking sheet with the aromatics, and cook in a hot oven until it reaches an internal temperature of approximately 56°C (use a meat thermometer!). This will take 20–25 minutes. Then remove the baking sheet from the oven and let the meat rest for 6–8 minutes.
- For the vegetables, trim the green beans, cut them into pieces, and cook them together in boiling salted water for about 5 minutes until tender-crisp. Then rinse them under cold water. Peel the sweet potato and onion and cut them into cubes and strips, respectively. Sauté both in hot oil in a wide pan for about 5 minutes, turning occasionally. Then stir in the cooked green and white beans, along with freshly chopped savory, and season everything generously with salt and pepper.
- Place the vegetables on a large platter, arrange the rack of lamb on top. Pour over the jus and serve.
